Cooking a Fresh Ham

Here's how we cook this beautifully tender cut of meat:

  1. Salt and pepper the outside of the roast. Don't cut off any of the fat until it's time to serve.

  2. Preheat the oven to 325deg F. Brown the roast over medium high heat in an oven safe pan with a little bit of oil (your choice on the oil). Once browned on all sides place the pan in the oven.

  3. Keep an eye on the internal temperature and remove when the center of the meat reads 135deg F, usually about 25-30mins but could be less or more depending on the thickness of your cut.

  4. Place the roast on a plate, tent with foil and let rest for 10 mins. The internal temp will rise to 145deg F and the juices will be nicely locked in. The juices in the pan make a nice topping.

  5. Serve with sides or slice thinly and store for sandwiches.
