Most Sunday mornings I pull out my favorite breakfast sausage recipe and create a meal around it. I’ve been in a bit of a rut lately which drove me to search for something new. I found a recipe for this breakfast sandwich in my new waffle maker’s manual. I tweaked it a little adding a few extra spices that are a favorite in my house but feel free to subtract or add your favorite spices.
I’ll start by sharing my breakfast sausage recipe. I frequently get focused on different foods and thinking about them all the time, trying to figure out how I can improve them. One such obsession was over breakfast sausage (I did the same for Italian and for English Bangers). I’m pretty happy with the way things turned out.
1lb of Bull City Farm ground pork
1/3-1/2 TBS Salt
1 tsp Sage
1/3 tsp Savory
1/8 tsp Nutmeg
2/3 tsp Marjoram
1/3 tsp Black Pepper
1. Mix all the spices together
2. Slowly mix the spices in making sure they are distributed evenly
3. Heat a small pan and cook a sample of the sausage. Adjust the spices to your taste.
4. Once you are happy with the flavor divide the sausage into 4 patties. The thinner the better.
Waffle Brunch Sandwiches
2 cups of all-purpose flour
2 tsp baking powder
1 tsp salt
1 tsp onion powder
½ tsp garlic powder
¼ tsp ground black pepper
2 eggs beaten
2 cups of milk
1/3 cup canola oil
1 ½ cups shredded cheddar cheese (divided)
4 sausage patties
1 TBS oil or butter to cook the eggs
Heat the oven to 200 deg F
In a large bowl, mix the dry ingredients
In a medium bowl, whisk the eggs, milk and oil until thoroughly combined. Stir in 1 cup of the cheese.
Make a well in the center of the dry ingredients and pour in the egg mixture. Stir until mixed.
Let the mixture rest while the waffle maker heats up. Follow your machine’s instructions and make your waffles. Keep warm on a cooling rack on a cookie sheet in the oven until all ingredients are ready.
Meanwhile cook your sausages and eggs to your liking.
Assemble your sandwiches with a handful of spinach and enjoy.
